Make this meal a holiday tradition, We Have!

1 rack of ribs, excess fat removed, cut into quarters.


1 cup of cider vinegar, 1/2 cup of maple syrup, 1/2 cup of brown sugar, 1/4 cup of hot sauce, 1 tbsp of chopped garlic, 1/4 cup of ketchup, 1/4 Keens Mustard, bring to a boil stirring constantly until all ingredients blend smoothly and allow to cool to room temperature

Marinate ribs over night

Grill over white hot charcoal slowly (use a drip pan in the barbecue) for 45 minutes to 1 hour. Baste with marinade

Serve with roasted corn on the cob or baked PEI potatoes

Copious quantities of Canadian beer and Niagara or Prince Edward County red wine

Dessert: Fresh Niagara Strawberry Shortcake, followed by even more copious quantities of Canadian beer or red wine
